Barolo Vigna Pajana
Barolo Riserva Vigna Pajana is harvested as a selection of the Pajana vineyard and destemmed with 15% whole berries, undergoing a fermentation lasting 46 days in two stages (30 days of submerged cap). The wine ages in Slavonian and Austrian oak barrels (3.200 lt) for 40 months.
The Vigna Pajana is savory and complex, intense and refined: elegant, powerful and tight at the beginnning, it is juicy and mineral with balsamic notes that become broader and more nuanced as the wine opens in the glass
